Like many answers, it depends on what you consider “complicated” and what age? Generally the more expensive and larger sets will be more complicated. Each set has a listed age range. If you try a set that is beyond your age range, that should be more complicated.
Building on your own creations without instructions is a great way to use your current LEGO sets to create new models. Or try using LEGO to copy a building or a machine that you see.
For “complicated” LEGO sets currently available in the minifigure or town scale, there are the Death Star 10188, Taj Mahal 10189, Green Grocer 10185. The more complicated Technic and large scale model series are the Cool Convertible 4993, Excavator 8294, Off Roader 8297, Volkswagen Beetle 10187. And there is the NXT Robotics series.
Some of the most complicated LEGO sets are those for education. The powered and advanced machines sets like 9645, 9607, 9665, and sets with solar power or pneumatics like 9684 or 8294. Many of these sets are not easily available.
